Timeframe: 5 minutes

Enhance flavor and increase absorption of fat-soluble vitamins using healthy oil condiments.


  • 1 whole egg at room temperature or 1 egg yolk at room temperature
  • 1 cup avocado oil (substitute extra virgin olive oil for a stronger flavor)
  • 2 tbsp vinegar, kombucha, whey, or lemon juice
  • ½ tsp Dijon mustard or mustard powder
  • ½ tsp salt


  • 1-quart mason jar and immersion blender or mixing bowl and whisk


Combine all ingredients except oil, then very slowly drip oil in the blend while whisking/blending rapidly till it thickens. Enjoy!

Use within a week and store in an airtight container in the refrigerator.

Variation: Herbal Mayonnaise

Follow basic recipe and add ½ cup fresh herbs such as dill, basil, tarragon, parsley, or aromatic wild greens like beebalm, garlic mustard, or wild onion. 


Ranch Dip 

Use the measurements below as a starting point and improvise by adding the following ingredients to taste.

  • 1 teaspoon dried dill weed
  • ½ teaspoon dried parsley
  • ½ teaspoon dried chives
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • fresh lemon juice
